Description
This quick and healthy garlic chicken zoodle recipe takes only 15 minutes and uses just four key ingredients. A low-carb, protein-rich meal perfect for weeknights.
Ingredients
2 medium chicken breasts, cut into 1/2 inch pieces
2 tablespoons olive oil
4 cloves garlic, minced or crushed
3 zucchini, spiralized
1/2 teaspoon red pepper flakes, optional
Salt & pepper, to taste
Instructions
1. Slice chicken into small pieces, spiralize zucchini, and mince garlic.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add garlic and sauté for 30–60 seconds until fragrant.
4. Add chicken. Season with salt, pepper, and optional red pepper flakes. Cook for 5–6 minutes until done.
5. Toss in zucchini noodles and cook for 1 minute, stirring gently.
6. Remove from heat. Adjust seasoning and top with optional parmesan if desired.
Notes
Swap chicken for tofu or shrimp for different variations.
Add a splash of lemon juice or fresh herbs to enhance flavor.
Blot zucchini noodles dry to reduce moisture.
