Description
Delicious, moist muffins made with apple, cinnamon, and Greek yogurt for a wholesome and easy breakfast treat.
Ingredients
1 cup all-purpose flour
1 cup rolled oats
1/2 cup Greek yogurt
1/2 cup sugar
1/2 cup applesauce
1 large egg
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup diced apples
Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
2. In a large bowl, mix the flour, oats, baking powder, baking soda, cinnamon, and salt.
3. In another bowl, whisk Greek yogurt, sugar, applesauce, and egg.
4. Combine wet and dry ingredients gently until just mixed.
5. Toss diced apples with a little flour and fold into the batter.
6. Scoop batter into muffin cups, filling each 3/4 full.
7. Bake for 20 to 25 minutes until golden and a toothpick comes out clean.
8. Cool in the pan for 5 minutes, then transfer to a rack.
Notes
Substitute honey for sugar for a natural sweetener.
Use coconut or almond yogurt for dairy-free muffins.
Add walnuts or pecans for extra crunch.
