½ cup all-purpose flour

¾ cup whole wheat flour

2 tablespoons cornstarch

1 teaspoon baking powder

¼ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon apple pie spice

Wet Ingredients:

1 large egg

¾ cup plain Greek yogurt

¼ cup oil

2 tablespoons maple syrup

1 teaspoon vanilla extract

⅓ cup light brown sugar

Add-Ins:

1 cup peeled and chopped apples


Instructions

1. Preheat the oven to 375°F and prepare a 12-cup muffin pan with liners or non-stick spray.

2. Make the streusel topping by combining flour, oats, cinnamon, and brown sugar. Cut in cold butter until crumbly.

3. In a medium bowl, whisk together all-purpose flour, whole wheat flour, cornstarch, baking powder, salt, cinnamon, and apple pie spice.

4. In a large bowl, whisk the egg, yogurt, oil, maple syrup, vanilla, and brown sugar until well blended.

5. Gently stir the dry ingredients into the wet mixture until just combined.

6. Fold in the chopped apples.

7. Spoon the batter into the muffin cups, filling them about ¾ full.

8. Top each muffin with a generous amount of streusel.

9. Bake for 22 to 25 minutes until a toothpick comes out clean.

10. Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
