Description
Creamy avocado chicken salad made without mayonnaise. High-protein, low-carb, and ready in just 10 minutes.
Ingredients
2 cups cooked shredded chicken breast
1 large ripe avocado mashed
1/4 cup plain Greek yogurt optional
2 tablespoons fresh lime juice
1/4 cup finely chopped red onion
2 stalks celery finely chopped
1/4 cup chopped fresh cilantro
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Place shredded chicken in a mixing bowl
2. Mash avocado and combine with lime juice and Greek yogurt
3. Add avocado mixture to chicken and stir gently
4. Mix in onion celery cilantro mustard salt and pepper
5. Stir until just combined
6. Taste and adjust seasoning
7. Serve immediately or refrigerate
Notes
For paleo omit yogurt and add olive oil
Use sugar-free mustard for keto
Store refrigerated up to 3 days
