Description

Soft, sweet Banana Lentil Muffins made with oats and protein-rich lentils. A healthy and delicious option for breakfast or snacks.


Ingredients

Scale

1 cup cooked green or brown lentils

3/4 cup mashed banana

1/4 cup avocado oil

1 egg

1/4 cup sugar

1 tsp vanilla

2/3 cup oats

2/3 cup white whole wheat flour

1 tsp baking soda

1 tsp cinnamon

1/2 cup chocolate chips


Instructions

1. Preheat oven to 375°F and grease or line muffin tin.

2. Blend lentils, banana, oil, egg, sugar, and vanilla until smooth.

3. Add oats, flour, baking soda, and cinnamon. Pulse until combined.

4. Fold in chocolate chips.

5. Scoop batter into muffin cups, filling 3/4 full.

6. Bake for 18–20 minutes until a toothpick comes out clean.

7. Cool for 5 minutes in pan, then transfer to a rack.

Notes

Use ripe bananas for maximum sweetness.

Swap sugar with prunes or dates for toddlers.

Muffins freeze well for up to 2 months.
