Description

Banana Oatmeal Muffins are soft, moist, and full of natural sweetness from ripe bananas. Topped with a buttery oat crumble, they’re perfect for breakfast or snacking.


Ingredients

1½ cups old-fashioned oats

1¼ cups all-purpose flour

½ cup granulated sugar

1½ teaspoons baking powder

1 teaspoon baking soda

¼ teaspoon salt

1 teaspoon ground cinnamon

Pinch of ground nutmeg

1 egg

¼ cup oil

1 teaspoon vanilla extract

1½ cups mashed ripe bananas (about 3 to 4 bananas)

Topping:

½ cup old-fashioned oats

2 tablespoons brown sugar

¼ teaspoon cinnamon

2 tablespoons melted butter


Instructions

1. Preheat oven to 375°F and prepare a muffin tin.

2. In a large bowl, combine oats, flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In a separate bowl, whisk egg, oil, and vanilla extract.

4. Add wet ingredients to the dry mixture and stir.

5. Fold in mashed bananas until fully combined.

6. Divide batter evenly among muffin cups.

7. Mix topping ingredients in a small bowl.

8. Sprinkle topping over each muffin.

9. Bake for 18 to 20 minutes until a toothpick comes out clean.

10. Cool muffins in the tin for 5 minutes, then transfer to a rack to cool completely.

Notes

Customize with nuts, chocolate chips, or dried fruit.

Use whole wheat flour for added fiber.

Freeze for up to 2 months for future meals.
