Ingredients
1 1/2 cups mashed ripe banana
1 1/4 cups granulated sugar
1 can crushed pineapple undrained 8 oz
1/2 cup buttermilk
1/2 cup butter melted
2 large eggs
1 tsp rum flavoring or vanilla
2 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp salt
1/2 cup flaked coconut
Instructions
1. Preheat oven to 350°F and grease a loaf pan
2. Mix mashed bananas sugar crushed pineapple buttermilk melted butter eggs and flavoring
3. Combine flour baking powder baking soda cinnamon salt and coconut
4. Add wet ingredients to dry ingredients and stir gently
5. Pour batter into prepared pan
6. Bake for 50 minutes to 1 hour until a toothpick comes out clean
7. Cool the bread completely before slicing
Notes
Use ripe bananas for stronger flavor
Do not overmix the batter
Line the pan with parchment paper for easier removal
