Description
Pão de Queijo is a traditional Brazilian cheese bread made with tapioca flour, Parmesan, and cheddar. It’s gluten-free, cheesy, and bakes up in under 15 minutes for the perfect snack or side dish.
Ingredients
2 cups tapioca flour
½ cup unsalted butter
⅔ cup whole milk
1 teaspoon salt
1 cup freshly grated Parmesan cheese
½ cup grated white cheddar cheese
2 large eggs
Instructions
1. Preheat oven to 375°F and line a baking sheet or grease a muffin tin.
2. In a saucepan, combine butter, milk, and salt. Bring to a boil, then remove from heat.
3. Pour hot mixture over tapioca flour and stir until smooth. Let sit for 10–15 minutes.
4. Mix in Parmesan, cheddar, and eggs until dough is soft and combined.
5. Scoop 1½ tablespoon portions and place on tray or into muffin tin. Roll into balls if desired.
6. Bake for 10–12 minutes until puffed and golden brown.
7. Serve warm and enjoy.
Notes
Mozzarella or Monterey Jack can replace cheddar.
For added flavor, include garlic powder or herbs.
Freeze dough portions for fresh-baked convenience.
