Description

Brazilian Coconut Chicken made with tender chicken simmered in creamy coconut milk, lime, garlic, ginger, and warm spices.


Ingredients

Scale

2 lbs boneless skinless chicken breasts or thighs

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1/2 teaspoon chili flakes

2 tablespoons olive oil or coconut oil divided

1 medium yellow onion chopped

4 garlic cloves minced

1 tablespoon fresh ginger grated

1 can full fat coconut milk

2 tablespoons tomato paste

1/2 cup chicken broth

Juice of 1 lime

1 tablespoon brown sugar

1/4 cup fresh cilantro chopped


Instructions

1. Pat chicken dry and cut into bite sized pieces

2. Season chicken with salt pepper paprika and chili flakes

3. Sear chicken in oil until golden then remove

4. Sauté onion until softened

5. Add garlic and ginger and cook briefly

6. Stir in tomato paste

7. Add coconut milk and broth and mix well

8. Return chicken and simmer until fully cooked

9. Add lime juice and sugar and adjust seasoning

10. Stir in cilantro and serve

Notes

Use full fat coconut milk for best texture

Adjust chili flakes to control heat level

Chicken thighs remain extra juicy

Store leftovers refrigerated up to four days
