Description
Soft and spiced carrot cake bars with a creamy cheesecake swirl baked in one easy pan.
Ingredients
1 cup light brown sugar
0.5 teaspoon kosher salt
1 teaspoon vanilla extract
1 cup all purpose flour
1 teaspoon ground cinnamon
0.5 teaspoon ground nutmeg
0.5 teaspoon baking powder
1 large egg
0.5 cup unsalted butter, melted
1 cup freshly grated carrots
4 ounces cream cheese, softened
1 large egg yolk
0.5 cup granulated sugar
Instructions
1. Preheat oven to 350°F and prepare 8×8 inch pan
2. Melt butter and let cool slightly
3. Whisk butter with egg, sugar, salt, and vanilla
4. Stir in flour, baking powder, cinnamon, and nutmeg
5. Fold in grated carrots
6. Beat cream cheese with egg yolk and sugar until smooth
7. Spread batter in pan and swirl cream cheese mixture on top
8. Bake 25 to 30 minutes
9. Cool completely before slicing
Notes
Use freshly grated carrots for best moisture
Do not overmix the batter
