Tender baked chicken breasts stuffed with sautéed mushrooms, garlic, and melted cheese, finished with a rich garlic butter topping.
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons unsalted butter
8 ounces mushrooms, finely chopped
2 cloves garlic, minced
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
2 tablespoons melted butter
1 teaspoon garlic powder
1 teaspoon paprika
Instructions
1. Preheat oven to 375°F and grease a baking dish
2. Cut pockets into chicken breasts and season
3. Cook mushrooms in butter, add garlic, then mix in cheeses
4. Stuff chicken breasts and secure openings if needed
5. Brush with melted butter mixed with garlic powder and paprika
6. Bake for 25 to 30 minutes until internal temperature reaches 165°F
7. Rest for 5 minutes before serving
Notes
Cook mushrooms completely before stuffing
Use a thermometer to avoid overcooking
Allow chicken to rest before slicing
