Description
These keto-friendly breadsticks are made with cauliflower and cheese, baked to golden perfection for a satisfying low-carb snack or side.
Ingredients
1 bag Green Giant Riced Cauliflower
1 bag Green Giant Riced Cauliflower & Sweet Potato
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese (divided)
2 large eggs
Chopped oregano (optional)
Salt and pepper to taste
Instructions
1. Thaw both bags of riced cauliflower completely.
2. Wrap in a towel and squeeze out as much liquid as possible.
3. In a bowl, mix drained veggies with cheddar, 1/2 cup mozzarella, eggs, oregano, salt, and pepper.
4. Line a baking sheet with parchment and shape mixture into a flat rectangle.
5. Bake at 400°F for 20 minutes until firm and golden.
6. Flip and top with remaining mozzarella.
7. Bake another 15 to 20 minutes until cheese melts and bottom is browned.
8. Cool slightly, then cut into 12 sticks and serve.
Notes
Substitute mashed sweet potato if you can’t find the blend.
Add garlic powder or herbs for extra flavor.
Pairs well with dipping sauces or soup.
