Cheesy Sausage Potato Soup is a rich and creamy comfort soup made with Italian sausage, tender red potatoes, vegetables, and freshly shredded cheddar cheese.
Ingredients
1 large onion, finely diced
3/4 cup carrots, chopped
2 ribs celery, chopped
4 garlic cloves, minced
3 tbsp butter
3 tbsp all purpose flour
6 cups chicken broth
1 1/2 lb red potatoes, cubed
1 tsp soy sauce
1 1/2 tsp hot sauce
1 1/4 tsp dried basil
3/4 tsp dried parsley
3/4 tsp dried oregano
1/2 tsp mustard powder
1/2 tsp black pepper
1/4 tsp smoked paprika
1 lb mild Italian sausage
1 1/4 cup heavy cream
2 1/4 cups freshly shredded cheddar cheese
Instructions
1. Dice onion, chop carrots and celery, mince garlic, and cube potatoes.
2. Brown sausage in a large pot over medium high heat, then set aside.
3. Melt butter in the same pot and sauté onions, carrots, and celery until softened.
4. Add garlic and cook briefly, then stir in flour to create a roux.
5. Gradually pour in chicken broth while stirring, then add cream, soy sauce, hot sauce, and seasonings.
6. Bring to a gentle boil, reduce heat, and simmer potatoes until fork tender.
7. Return cooked sausage to the pot and stir to combine.
8. Remove from heat and gradually stir in shredded cheddar until fully melted and smooth.
9. Taste, adjust seasoning if needed, and serve hot.
Notes
Shred cheddar from a block for smoother melting.
Remove pot from heat before adding cheese to prevent separation.
Maintain a gentle simmer instead of a rolling boil for best texture.
