Description
Tender cherry cobbler muffins with a crisp, buttery topping. A simple, delicious bake perfect for breakfast or a quick snack.
Ingredients
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
3/4 cup buttermilk
1 1/2 cups cherries, halved
For the Crumble:
1/2 cup flour
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup unsalted butter, cold and cubed
Pinch of salt
Instructions
1. Preheat oven to 375°F and prep muffin tin.
2. Mix flour, baking powder, soda, and salt in a bowl.
3. Cream butter and sugar until fluffy.
4. Add eggs and vanilla.
5. Mix in flour and buttermilk in turns.
6. Fold in halved cherries.
7. Divide batter into muffin cups.
8. Make crumble topping and add on top.
9. Bake for 20–25 minutes.
10. Cool briefly, then transfer to wire rack.
Notes
Use frozen cherries straight from the freezer.
Add almond extract for flavor variation.
Can be frozen up to 3 months.
