Description

Baked chicken and broccoli nuggets made for babies starting solids. These are soft, easy to chew, and ideal for baby-led weaning.


Ingredients

Scale

1 lb ground chicken

¾ cup broccoli florets, cooked and finely chopped

½ cup mild cheddar cheese, shredded

2 tablespoons grated parmesan

1½ tablespoons olive oil

½ teaspoon garlic powder

¼½ teaspoon kosher salt (optional)

¼ teaspoon paprika

¼ teaspoon black pepper

¼ cup plain breadcrumbs

¼ cup panko breadcrumbs


Instructions

1. Preheat oven to 375°F and line a baking tray with parchment.

2. Mix plain and panko breadcrumbs together. Set aside.

3. Steam broccoli, then pat dry and chop into small pieces.

4. In a bowl, mix chicken, broccoli, cheeses, oil, and seasonings.

5. With damp hands, shape the mixture into equal-sized nuggets.

6. Coat each nugget in breadcrumb blend.

7. Place on tray with spacing. Spray tops lightly with oil.

8. Bake for 25–30 minutes, flipping halfway.

9. Broil 1–2 minutes for a golden finish if desired. Ensure internal temp is 165°F.

10. Cool before serving to babies.

Notes

Be sure broccoli is very dry to prevent sogginess.

Skip salt for babies under one year old.

Freeze cooked nuggets flat before storing in bags.
