Smooth, fudgy, and naturally plant-based, these Chocolate Chickpea Truffles are a simple, no-bake dessert made with wholesome ingredients and bold chocolate flavor.
Ingredients
1 13.5 oz can chickpeas (drained and rinsed)
1/2 cup almond or cashew butter
1 cup vegan dark chocolate chips (melted)
For coating:
1 cup vegan dark chocolate chips (melted)
1 tbsp coconut oil
Optional toppings: shredded coconut, chopped nuts, sprinkles, freeze-dried fruit, cacao nibs
Instructions
1. Rinse and drain chickpeas, then pat dry.
2. Melt 1 cup chocolate chips until smooth.
3. Blend chickpeas, nut butter, and melted chocolate until creamy.
4. Scoop mixture into small portions and place on tray.
5. Freeze for 15–20 minutes to firm up.
6. Roll into smooth balls and freeze again.
7. Melt second cup of chocolate chips with coconut oil.
8. Dip truffles in coating and add toppings.
9. Freeze again to set and store in fridge or freezer.
Notes
Try peanut butter for a different twist.
Add protein powder for a boost.
Use sugar-free chocolate for a lower sugar version.
