Description
Wholesome, protein-rich banana bread made with cottage cheese and naturally sweetened. Perfect for a healthier snack or breakfast.
Ingredients
2 ripe bananas (about 200g or 7 oz)
180g (⅔ cup) cottage cheese
1 large egg
80 ml (⅓ cup) maple syrup or honey
1 tsp vanilla extract
1 tsp ground cinnamon
⅙ tsp salt
150g (1½ cups) oat flour
50g (½ cup) almond flour or extra oat flour
2 tsp baking powder
Instructions
1. Preheat oven to 350°F (180°C) and prepare your loaf pan.
2. Mash bananas in a bowl until mostly smooth.
3. Add cottage cheese, egg, maple syrup, vanilla, cinnamon, and salt. Stir to combine.
4. Fold in oat flour, almond flour, and baking powder. Adjust texture if needed.
5. Transfer the batter into the loaf pan and smooth the top.
6. Bake for about 30 minutes, or until a toothpick comes out clean.
7. Cool in the pan for 10 minutes, then transfer to a rack to cool fully before slicing.
Notes
Use very ripe bananas for the best results.
Almond flour can be replaced with more oat flour for a nut-free option.
For a vegan version, use a flax egg and plant-based cottage cheese.
