Description

This moist banana bread gets its tender texture from cottage cheese and comes together in one bowl. Easy, comforting, and perfect for freezing or sharing.


Ingredients

½ cup packed light brown sugar (100g)

2 large eggs

½ cup neutral oil, such as avocado or canola (120ml)

½ cup full-fat cottage cheese (120g)

1 cup mashed ripe banana (about 23 medium bananas) (240g)

1 teaspoon vanilla extract

¾ teaspoon kosher salt

1½ cups all-purpose flour (160g)

1½ teaspoons baking powder

½ teaspoon baking soda

½ cup chocolate chips (90g)


Instructions

1. Preheat the oven to 350°F (175°C). Lightly grease and line a 9×5-inch loaf pan with parchment paper.

2. In a large bowl, whisk the brown sugar and eggs until light and fluffy.

3. Add oil, cottage cheese, banana, vanilla, and salt. Mix until well combined.

4. Sprinkle flour, baking powder, and baking soda over the wet ingredients. Stir gently to combine.

5. Fold in chocolate chips.

6. Transfer batter to the loaf pan and smooth the top.

7. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out mostly clean.

8. Let cool in pan for 20 minutes. Remove and cool completely before slicing.

Notes

Use full-fat cottage cheese for the best results. You can swap chocolate chips for nuts or dried fruit. Let the loaf cool fully before slicing for cleaner cuts.
