Ingredients
2 cups cooked shredded chicken
1 cup cottage cheese
4 cups chicken broth
1 carrot, diced
1 celery stalk, sliced
1 small onion, chopped
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large pot and sauté onion, carrot, and celery until softened.
2. Add chicken broth and bring to a gentle simmer.
3. Stir in shredded chicken and cook for a few minutes.
4. Reduce heat and slowly add cottage cheese, stirring continuously.
5. Let the soup simmer on low for 5 minutes.
6. Add salt and pepper to taste.
7. Serve hot.
Notes
Add cooked rice or barley to make it more filling.
Spinach or kale can be added for extra nutrients.
