Description
A warm, protein-rich breakfast cookie with cinnamon flavor and a soft texture. These cookies are sweetened naturally and topped with a light vanilla glaze.
Ingredients
¼ cup unsalted butter, melted
½ cup maple syrup
2 tbsp canola or vegetable oil
1 large egg
1 tsp vanilla extract
¾ cup blended cottage cheese
1½ cups quick oats
¾ cup white whole wheat flour
½ tbsp ground cinnamon
1 tsp baking powder
½ tsp sea salt
For the glaze:
½ cup powdered sugar
1–2 tsp milk
¼ tsp vanilla extract
Instructions
1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
2. Blend cottage cheese until completely smooth.
3. In a large bowl, whisk egg, maple syrup, vanilla, oil, butter, and cottage cheese.
4. In a second bowl, stir together oats, flour, cinnamon, baking powder, and salt.
5. Add dry ingredients to the wet mixture and mix until combined.
6. Scoop dough onto baking sheet and gently flatten each cookie.
7. Bake for 8–10 minutes until edges are golden and tops are set.
8. Cool on the baking sheet for 10–15 minutes.
9. Whisk glaze ingredients and drizzle over cooled cookies.
Notes
Store cookies in a sealed container at room temperature for up to 4 days.
For freezing, place in a single layer before transferring to a storage bag.
For a gluten-free version, use GF oats and flour.
Skip or modify the icing to reduce sugar.
