Ingredients

¾ cup granulated sugar

1 cinnamon stick (3 to 4 inches)

1 cup Arborio rice

1 tsp vanilla bean paste or extract

⅔ cup golden raisins (optional)

Garnish: ground cinnamon or grated cinnamon


Instructions

1. In a large saucepan, combine milk, water, sugar, cinnamon stick, and rice.

2. Bring to a gentle boil over medium-high heat, stirring regularly.

3. Reduce heat to maintain a steady simmer, stirring often to prevent sticking.

4. Simmer for 35 to 45 minutes, until rice is soft and pudding has thickened.

5. Remove from heat, discard cinnamon stick, and stir in vanilla and raisins.

6. Spoon into serving bowls and let cool slightly or refrigerate.

7. Sprinkle with cinnamon just before serving.

Notes

Use coconut or almond milk for a dairy-free version.

Replace raisins with chopped dates or dried cranberries for variation.

Add a vanilla bean pod at the start for a stronger vanilla flavor.
