Crispy oven-baked wings with bold spices and juicy texture, made without frying.
Ingredients
10–12 chicken wing segments
1 ½ teaspoons baking powder (aluminum-free)
1 tablespoon butter
⅛ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
⅛ teaspoon onion powder
¼ teaspoon smoked paprika
⅛ teaspoon cayenne pepper
¼ teaspoon crushed red pepper
¼ teaspoon chipotle powder (optional)
⅛ teaspoon ground ginger (optional)
⅛ teaspoon cumin (optional)
Instructions
1. Cut wings into flats and drumettes. Do not dry them.
2. Mix baking powder and seasonings in a bowl or bag.
3. Add wings and coat evenly. Let rest 15–20 minutes.
4. Preheat oven to 425°F. Line a baking sheet with parchment.
5. Place wings spaced apart on the tray. Top with butter pieces.
6. Bake for 30 minutes. Flip wings. Bake 15 minutes more.
7. Let rest 5 minutes before serving. Serve with dip and vegetables.
Notes
Aluminum-free baking powder ensures the best flavor.
