Description
Golden roasted baby potatoes coated in garlic butter and roasted until crispy outside and tender inside.
Ingredients
1 1/2 lbs baby potatoes, halved
4 cloves garlic, minced
4 tbsp butter, melted
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp fresh parsley, chopped
Instructions
1. Preheat oven to 425°F and line a baking sheet with parchment paper
2. Boil halved potatoes for 8 to 10 minutes until slightly tender then drain
3. Mix melted butter olive oil garlic salt and pepper in a bowl
4. Toss potatoes in the garlic butter mixture until evenly coated
5. Place potatoes cut side down on baking sheet
6. Roast for 20 to 25 minutes until golden and crispy
7. Sprinkle chopped parsley before serving
Notes
Dry potatoes well after boiling to improve crispiness
Use baby potatoes or Yukon Gold for best results
Do not overcrowd the baking tray
