Ingredients
8 oz feta cheese, crumbled
1 cup ricotta cheese
1 tsp dried oregano
1 tsp garlic powder
Salt and pepper to taste
1 package (10 oz) phyllo dough, thawed
4 tbsp melted butter
Olive oil spray
1/2 cup honey
1 tsp chili flakes (adjust to taste)
Instructions
1. Preheat oven to 400°F and prepare a parchment-lined baking tray.
2. Mix feta, ricotta, oregano, garlic powder, salt, and pepper in a bowl.
3. Unroll phyllo and cover with a damp towel to prevent drying.
4. Brush a sheet with butter, layer another on top, and repeat. Cut into 4-inch strips.
5. Place cheese mixture on the bottom of each strip, fold in sides, and roll tightly.
6. Place seam-side down on tray and spray tops with olive oil.
7. Bake for 15–20 minutes or until golden and crispy.
8. Simmer honey with chili flakes for 2–3 minutes on low heat.
9. Let rolls cool slightly, then drizzle with chili honey and serve.
Notes
Use block feta for best texture and flavor.
Add spinach or fresh herbs to the filling if desired.
Make ahead and store unbaked rolls in the fridge or freezer.
