Ingredients
8 Irish pork sausages
1 tablespoon vegetable oil
4 large russet potatoes
4 tablespoons unsalted butter
1/3 cup whole milk or cream
1 teaspoon fresh thyme
Salt and black pepper to taste
Grated sharp cheddar optional
Fresh parsley or chives optional
Instructions
1. Preheat oven to 400°F and grease muffin tin
2. Cook sausages until browned and fully cooked
3. Boil potatoes until tender and drain well
4. Mash potatoes with butter and milk until smooth
5. Press mashed potatoes into muffin wells
6. Add sliced sausage to each cup
7. Top with more mash and cheese if desired
8. Bake until golden and crisp
9. Cool slightly and garnish before serving

Use a ricer for smooth mash
Keep edges thin for crisp texture
Do not over add milk
