Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1.5 lbs baby red potatoes, quartered
1 lb carrots, peeled and cut into chunks
6 cloves garlic, minced
1/2 cup unsalted butter, melted
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
1/2 cup chicken broth
1 tbsp chopped parsley, optional
Instructions
1. Place chicken, potatoes, and carrots into the slow cooker.
2. Mix melted butter, garlic, Italian seasoning, salt, pepper, and chicken broth in a bowl.
3. Pour the garlic butter mixture over the ingredients and stir gently to coat.
4. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
5. Ensure chicken reaches 165°F before serving. Garnish with parsley if desired.
Notes
You may substitute chicken thighs for breasts for added moisture.
