Description

This Crockpot Cheesy Chicken Broccoli Rice recipe is a simple, creamy, and hearty one pot slow cooker dinner made with tender chicken, fluffy rice, fresh broccoli, and melted cheddar cheese.


Ingredients

2 boneless, skinless chicken breasts

1 cup long grain white rice

2 cups chicken broth

1 cup heavy cream

1 can 10.5 ounces cream of chicken soup

2 cups shredded cheddar cheese

2 cups broccoli florets

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Place chicken breasts in the crockpot.

2. Add rice, chicken broth, heavy cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir gently.

3. Cover and cook on LOW for 4 to 5 hours until chicken is cooked and rice is tender.

4. Remove chicken, shred with two forks, and return to the crockpot.

5. Stir in broccoli and shredded cheese. Cover and cook 30 more minutes.

6. Stir well and serve warm.

Notes

Use freshly shredded cheese for best melting.

Thaw frozen broccoli before adding.

Check rice at 4 hours to prevent overcooking.
