Description
Moist and fluffy Easter Pineapple Heaven Cake made with crushed pineapple, sour cream, and a sweet pineapple glaze.
Ingredients
1 1/2 cups all purpose flour
1 cup granulated sugar
1/2 cup unsalted butter softened
2 large eggs
1 cup crushed pineapple drained
1/2 cup sour cream
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp salt
1/2 cup confectioners sugar
2 tbsp pineapple juice
Instructions
1. Preheat oven to 350°F and grease a loaf pan
2. Whisk flour baking powder and salt in a bowl
3. Cream butter and sugar until light and fluffy
4. Add eggs one at a time and mix well then add vanilla
5. Alternate flour mixture and sour cream into the batter
6. Fold in crushed pineapple gently
7. Pour batter into loaf pan and smooth the top
8. Bake for 50 to 60 minutes until a toothpick comes out clean
9. Cool cake then drizzle with pineapple glaze
Notes
Drain pineapple thoroughly before adding to batter
Avoid over mixing after adding flour
Allow cake to cool completely before glazing
