Description
A customizable egg bake casserole that is high in protein, easy to prepare, and perfect for breakfast or brunch.
Ingredients
12 large eggs
1 cup cottage cheese
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
2 cups cooked sausage, ham, or turkey bacon
2 cups chopped vegetables
1 tablespoon butter or cooking spray
Instructions
1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
2. Whisk eggs, cottage cheese, milk, salt, and pepper until smooth.
3. Stir in cheese, cooked protein, and vegetables.
4. Pour mixture into baking dish and level evenly.
5. Bake for 30 to 35 minutes until center is set.
6. Rest for 5 minutes before slicing and serving.
Notes
Prepare in advance and refrigerate overnight if desired.
Add a few extra minutes to baking time if baking from cold.
Cook watery vegetables beforehand for best texture.
