Description
Frito Cowboy Cabbage is a crunchy cabbage salad made with black beans, corn, Chili Cheese Fritos, and creamy chipotle lime dressing.
Ingredients
1 bag (16 ounces) coleslaw mix
1 can (15 ounces) black beans, rinsed and drained
1 1/2 cups canned corn kernels, drained
1 medium jalapeño, seeded and finely diced
1 small red bell pepper, finely diced
3 green onions, sliced
1/4 cup fresh cilantro, chopped
1 tablespoon taco seasoning
1/2 teaspoon ground cumin
1 bag (9.75 ounces) Chili Cheese Fritos
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup fresh lime juice
2 tablespoons chipotle sauce
Instructions
1. Combine coleslaw mix, beans, corn, peppers, onions, cilantro, taco seasoning, and cumin in a large bowl.
2. Whisk sour cream, mayonnaise, lime juice, and chipotle sauce in a separate bowl.
3. Pour dressing over cabbage mixture and toss gently.
4. Fold in most of the Fritos carefully.
5. Top with remaining Fritos and serve immediately.
Notes
Add dressing just before serving for best texture.
Drain canned ingredients thoroughly.
Adjust chipotle sauce to control spice level.
