A comforting and flavorful crockpot meal featuring juicy chicken breasts, tender baby potatoes, and a creamy garlic Parmesan sauce.
Ingredients
4 boneless, skinless chicken breasts
1.5 lb baby potatoes, halved
1 cup chicken broth
0.5 cup freshly grated Parmesan cheese
4 cloves garlic, minced
1 tbsp Italian seasoning
1 tsp salt
0.5 tsp black pepper
0.5 tsp red pepper flakes, optional
2 tbsp olive oil
Fresh parsley, chopped, optional
Instructions
1. Wash and halve the baby potatoes.
2. Mince the garlic.
3. Rub chicken with olive oil and seasonings.
4. Layer potatoes in crockpot and place chicken on top.
5. Pour broth evenly over ingredients.
6. Sprinkle garlic and Parmesan on top.
7. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until chicken reaches 165°F.
8. Spoon sauce over before serving and garnish with parsley.
Notes
Use freshly grated Parmesan for smoother sauce.
Cook on LOW to prevent curdling.
Simmer sauce separately if thicker texture is desired.
