Description
Garlic Parmesan Crockpot Chicken & Potatoes is a comforting slow cooker dinner made with tender chicken, seasoned potatoes, creamy garlic Parmesan sauce, and melted mozzarella cheese.
Ingredients
1 lb boneless skinless chicken breasts
5 medium potatoes, chopped
2 tbsp olive oil
1/2 tsp salt plus additional to taste
1/2 tsp black pepper
1 tsp paprika
1 tsp onion powder
1 tsp Italian seasoning
2 tbsp minced garlic
Garlic Parmesan sauce, enough to coat chicken
1 cup shredded mozzarella cheese
Instructions
1. Wash and chop the potatoes into evenly sized pieces.
2. Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika.
3. Spread the seasoned potatoes evenly in the bottom of the crockpot.
4. Season chicken breasts with salt, black pepper, paprika, onion powder, and Italian seasoning.
5. Place the chicken on top of the potatoes.
6. Sprinkle minced garlic evenly over the chicken.
7. Pour Garlic Parmesan sauce over the chicken until fully coated.
8. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
9. During the last 30 minutes, sprinkle shredded mozzarella over the top and allow it to melt.
10. Serve warm.
Notes
You can substitute chicken thighs for a juicier result.
Add vegetables like broccoli or green beans during the last hour for a complete meal.
Adjust the amount of sauce based on your preferred consistency.
