Description

Moist carrot cake with pineapple and cream cheese frosting that delivers warm spice and tropical flavor.


Ingredients

2 cups all purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1 1/2 cups granulated sugar

3 large eggs

1 cup vegetable oil

2 tsp vanilla extract

2 cups grated carrots

1 cup crushed pineapple drained

1/2 cup chopped walnuts optional

8 oz cream cheese softened

1/2 cup unsalted butter softened

2 cups powdered sugar

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F and grease a 9×13 inch baking pan

2. Whisk flour baking powder baking soda cinnamon and salt together

3. Beat sugar eggs oil and vanilla until smooth

4. Add dry ingredients to wet ingredients and mix until combined

5. Fold in grated carrots pineapple and walnuts

6. Pour batter into prepared pan

7. Bake 35 to 40 minutes until toothpick comes out clean

8. Allow cake to cool completely

9. Beat cream cheese and butter until smooth

10. Add powdered sugar and vanilla extract and mix until creamy

11. Spread frosting evenly over cooled cake

Notes

Drain pineapple well before adding to batter

Fresh grated carrots give the best flavor

Cake flavor improves after resting overnight
