Description
A warming garlic soup made with over 20 cloves of garlic, fresh ginger, and herbs. A creamy, plant-based recipe to help comfort and nourish.
Ingredients
1 large onion, chopped
4 tablespoons olive oil or neutral oil
3 sprigs rosemary
4 sprigs thyme
20 garlic cloves, peeled
1 teaspoon fresh ginger (or ½ tsp powdered)
3 cups vegetable broth
Instructions
1. Bundle rosemary and thyme with kitchen twine and set aside.
2. In a medium pot, heat olive oil over medium heat. Add chopped onion and sauté for 3 minutes.
3. Add garlic and ginger, cooking for another 2 minutes to release aroma.
4. Pour in vegetable broth and add the herb bundle. Stir and reduce heat to low. Cover and simmer for 25 minutes.
5. Remove herb bundle and discard.
6. Blend soup using immersion blender until completely smooth, or blend in batches using a standard blender.
7. Serve warm, garnished with fresh herbs or toppings of choice.
Notes
Add white beans or potato before blending for a thicker texture.
For a richer taste, use coconut milk or chicken broth.
Top with parsley, lemon zest, or chili oil for extra flavor.
