Ingredients
2 medium-sized beets, cooked and pureed (about 1 cup)
1⁄2 cup unsweetened applesauce
1⁄3 cup honey or maple syrup
1⁄3 cup coconut oil, melted
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1⁄2 cup rolled oats
1 1/2 teaspoons baking powder
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
1⁄2 teaspoon ground cinnamon
1⁄4 teaspoon ground nutmeg
1⁄2 cup walnuts or pecans, chopped (optional)
1⁄2 cup raisins or chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line or grease a muffin tin.
2. In a bowl, combine beet puree, applesauce, honey, and coconut oil.
3. Add eggs and vanilla, whisk until smooth.
4. In another bowl, mix flour, oats, baking powder, soda, salt, and spices.
5. Stir dry ingredients into wet until just combined.
6. Fold in optional nuts or chocolate chips.
7. Spoon batter into muffin tin.
8. Bake 18–22 minutes until a toothpick comes out clean.
9. Cool in tin for 5 minutes, then transfer to a wire rack.
Notes
Beets add natural sweetness and color.
Try chia seeds or flax for extra fiber.
Serve warm with yogurt or cream cheese.
