Ingredients

3 large eggs

1 cup low-fat vanilla Greek yogurt

2 tablespoons lemon zest

1 and ½ tablespoons lemon extract

½ cup vegetable oil

1 and ½ cups all-purpose flour

2 and ¼ teaspoons baking powder

¼ teaspoon salt

1 cup powdered sugar

3 tablespoons lemon juice


Instructions

1. Preheat oven to 350°F and prepare loaf pan with grease and flour.

2. Whisk sugar, eggs, yogurt, lemon zest, extract, and oil until smooth.

3. Sift in flour, baking powder, and salt. Gently fold to combine without overmixing.

4. Pour batter into pan and bake for 45–50 minutes, tent with foil if needed.

5. Cool in pan for 25 minutes, then transfer to wire rack.

6. Combine powdered sugar and lemon juice to make glaze.

7. Drizzle glaze over cooled loaf and allow to set before slicing.
