Ingredients
4 boneless skinless chicken breasts
8 ounces Boursin cheese
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley
1 tablespoon fresh thyme
1 tablespoon fresh rosemary
2 tablespoons olive oil
2 tablespoons melted butter
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
Instructions
1. Preheat oven to 375°F and grease baking dish
2. Combine breadcrumbs Parmesan herbs and spices
3. Slice pockets into chicken breasts
4. Stuff each pocket with Boursin cheese
5. Brush chicken with olive oil and coat with breadcrumb mixture
6. Drizzle melted butter over chicken
7. Bake 30 to 35 minutes until internal temperature reaches 165°F
8. Rest 5 minutes before serving
