Description

This protein-packed creamy beef pasta is made with lean ground beef, Greek yogurt, and hearty pasta. It’s rich, cheesy, and quick enough for a weeknight dinner.


Ingredients

12 oz penne or rigatoni pasta

1 lb lean ground beef (90/10)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced (optional)

1 tsp Italian seasoning

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1 cup beef broth

1 cup milk or half-and-half

3/4 cup Greek yogurt

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Chopped parsley


Instructions

1. Cook pasta until al dente and set aside.

2. Sauté onion in olive oil for 3 minutes, add garlic and cook 30 seconds more.

3. Add ground beef, spices, and bell pepper, and cook until browned.

4. Stir in beef broth and milk, simmer 3-4 minutes.

5. Lower heat and mix in Greek yogurt until creamy.

6. Add cheeses and stir until fully melted and thickened.

7. Toss in pasta and combine well with the sauce.

8. Garnish with chopped parsley and serve warm.

Notes

Use high-protein or whole wheat pasta to increase nutrients.

Ground turkey or meat alternatives can be used instead of beef.

Greek yogurt keeps the sauce creamy while adding protein.
