Description

A flavorful high-protein bowl featuring spicy-sweet gochujang beef, roasted sweet potatoes, creamy avocado, and a hot honey drizzle. Perfect for meal prep or a nourishing dinner.


Ingredients

Scale

500g ground beef

400g sweet potatoes, peeled and cubed

1 avocado, diced

2 tablespoons olive oil

2 tablespoons gochujang

2 tablespoons soy sauce

200g cottage cheese

2 teaspoons toasted sesame seeds

Fresh coriander (optional)

Sea salt and black pepper, to taste

Hot Honey:

1/3 cup honey

1 teaspoon gochugaru (Korean chili flakes)


Instructions

1. Preheat the oven to 200°C (400°F). Toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Roast for 20–25 minutes until golden.

2. Heat the remaining oil in a skillet. Brown the beef, then stir in gochujang and soy sauce. Simmer until sauce thickens.

3. In a saucepan, gently heat honey and chili flakes for 1–2 minutes until bubbling slightly. Remove from heat and cool.

4. Add cottage cheese to bowls. Top with roasted sweet potatoes, beef, and avocado. Drizzle hot honey and sprinkle sesame seeds. Garnish with coriander.

Notes

You can replace ground beef with turkey or tofu.

Greek yogurt can be used instead of cottage cheese.

Adjust chili flakes in honey to your spice preference.

Store components separately and assemble when ready to eat.
