Description
Ina Garten’s Company Pot Roast is a slow braised American classic featuring tender chuck roast, fresh herbs, vegetables, and a rich savory sauce, perfect for gatherings.
Ingredients
3 to 4 pounds chuck roast
2 tablespoons olive oil
Salt and black pepper to taste
2 onions, chopped
3 carrots, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1 cup red wine
2 cups beef broth
2 sprigs fresh thyme
2 sprigs fresh rosemary
1 bay leaf
Instructions
1. Pat the chuck roast dry and season with salt and pepper.
2. Heat olive oil in a Dutch oven and sear the roast on all sides until browned.
3. Remove the roast and sauté onions, carrots, and celery until softened.
4. Add minced garlic and cook briefly.
5. Pour in red wine and scrape the bottom of the pot.
6. Return the roast and add beef broth and herbs.
7. Cover and simmer on low heat for about 3 hours until tender.
8. Let the roast rest, slice or shred, and serve with the sauce.
Notes
For best flavor, prepare a day in advance.
Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
