Description
Irish Colcannon is a classic Irish side dish made with creamy mashed potatoes, butter, and tender greens. Perfect for holidays or comforting family dinners.
Ingredients
4 large russet potatoes, peeled and cut into chunks
Salt to taste
5 to 6 tablespoons unsalted butter, plus extra for serving
3 cups chopped cabbage, kale, or chard
3 green onions, minced
1 cup milk or cream
Instructions
1. Place potatoes in a pot, cover with cold salted water, and boil until tender, about 15 to 20 minutes.
2. Drain potatoes thoroughly.
3. Melt butter in the same pot and cook greens until softened, about 3 to 4 minutes.
4. Add green onions and cook briefly.
5. Pour in warm milk, return potatoes to the pot, and mash until creamy.
6. Season with salt and serve hot with butter on top.
Notes
Substitute half the potatoes with parsnips for a sweeter flavor.
Add crispy bacon for a savory variation.
Warm milk before adding for best texture.
