Ingredients
2 large sweet potatoes, peeled and sliced into wedges
1/4 cup olive oil
2 cloves garlic, minced
2 tablespoons Italian herb seasoning
Salt and pepper to taste
4–5 cups vegetable broth
Optional toppings: chives, croutons, Parmesan
Instructions
1. Peel and slice sweet potatoes into thin wedges.
2. In a small bowl, mix olive oil with garlic and herbs.
3. Brush potato slices with oil mixture and place on baking tray.
4. Cover with foil and roast at 400°F for 30 minutes.
5. Uncover and roast for 5–10 minutes more until tender.
6. Transfer to a pot and add broth. Simmer for 10 minutes.
7. Blend until smooth using immersion or countertop blender.
8. Season with salt and pepper and serve with toppings.
Notes
Add white beans or lentils for extra protein.
Use coconut milk for a dairy-free creamy boost.
Top with pine nuts or croutons for texture.
