Ingredients

2 lbs ground chicken

1 cup shredded Parmesan cheese

1 cup breadcrumbs (panko or regular)

2 large eggs

½ cup whole milk (or plant-based milk)

4 cloves garlic, minced

1 tsp garlic powder

1 tsp onion powder

1 tsp dried basil

1 tsp dried parsley

1 tsp salt

½ tsp black pepper

2 tbsp unsalted butter, melted

¼ cup extra Parmesan cheese for topping

2 tbsp chopped fresh parsley
Instructions

Preheat the oven to 375°F. Line a loaf pan with parchment paper or lightly grease a baking tray.

In a large bowl, whisk together the eggs and milk.

Add minced garlic, garlic powder, onion powder, basil, parsley, salt, and pepper. Stir to combine.

Mix in the breadcrumbs and 1 cup of Parmesan cheese.

Add the ground chicken and gently fold in until just combined. Do not overmix.

Shape the meat into a loaf and place it in the pan or on the tray.

Brush the top with half the melted butter.

Bake for 30 minutes.

Remove from the oven and brush with the remaining butter.

Bake for another 25–35 minutes, until the internal temperature reaches 165°F.

Let the loaf rest for 10–15 minutes before slicing.

Sprinkle with extra Parmesan and fresh parsley, then serve.
