Ingredients

  • 2 lbs ground chicken

  • 1 cup shredded Parmesan cheese

  • 1 cup breadcrumbs (panko or regular)

  • 2 large eggs

  • ½ cup whole milk (or plant-based milk)

  • 4 cloves garlic, minced

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried basil

  • 1 tsp dried parsley

  • 1 tsp salt

  • ½ tsp black pepper

  • 2 tbsp unsalted butter, melted

  • ¼ cup extra Parmesan cheese for topping

  • 2 tbsp chopped fresh parsley


Instructions

  • Preheat the oven to 375°F. Line a loaf pan with parchment paper or lightly grease a baking tray.

  • In a large bowl, whisk together the eggs and milk.

  • Add minced garlic, garlic powder, onion powder, basil, parsley, salt, and pepper. Stir to combine.

  • Mix in the breadcrumbs and 1 cup of Parmesan cheese.

  • Add the ground chicken and gently fold in until just combined. Do not overmix.

  • Shape the meat into a loaf and place it in the pan or on the tray.

  • Brush the top with half the melted butter.

  • Bake for 30 minutes.

  • Remove from the oven and brush with the remaining butter.

  • Bake for another 25–35 minutes, until the internal temperature reaches 165°F.

  • Let the loaf rest for 10–15 minutes before slicing.

 

  • Sprinkle with extra Parmesan and fresh parsley, then serve.

Notes

  • Ground turkey or lean beef can be used instead of chicken.

  • Romano cheese offers a sharper flavor alternative.
