Simple and comforting slow cooker chicken breasts with a homemade gravy, perfect for everyday meals.
Ingredients
4 boneless skinless chicken breasts, about 2 pounds
3 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
¼ cup chicken broth
4 sprigs thyme (optional)
2 sprigs rosemary (optional)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
Extra broth, as needed
Instructions
1. Pat chicken dry.
2. Mix oil and spices into a paste, and coat chicken evenly.
3. Add broth to slow cooker and place chicken in a single layer. Add herbs on top.
4. Cover and cook on low for 1.5 to 2.5 hours until internal temperature reaches 165°F.
5. Remove chicken and keep warm.
6. Measure drippings and add broth to make 1 cup.
7. Melt butter and whisk in flour. Cook for 1 to 2 minutes.
8. Gradually whisk in liquid, cooking until thickened.
9. Serve chicken whole or sliced, topped with gravy.
Notes
Use cassava flour or cornstarch for a gluten-free option.
Add vegetables for a one-pot meal.
