Ingredients
1 pound boneless, skinless chicken breasts
1 cup orzo pasta
2 cups low-sodium chicken broth
1 tablespoon olive oil
2 cloves garlic, minced
1 lemon, zested and juiced
1 cup crumbled feta cheese
2 cups fresh spinach or kale
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
1. Season chicken with salt, pepper, and lemon zest.
2. Heat olive oil in a skillet over medium heat.
3. Cook chicken 5 to 7 minutes per side until fully cooked, then rest.
4. Sauté garlic for about 1 minute.
5. Toast orzo for 1 to 2 minutes.
6. Add broth and lemon juice and bring to a gentle boil.
7. Simmer covered for 10 to 12 minutes until orzo is tender.
8. Stir in greens and cook until wilted.
9. Add sliced chicken and feta and stir gently.
10. Garnish with parsley and serve warm.

Avoid overcooking the orzo.
