Description

Marry Me Broccoli is a creamy, cheesy, and flavorful skillet side dish made with seared broccoli, sun-dried tomatoes, garlic, basil, and Parmesan. It’s quick, rich, and dinner-party worthy.


Ingredients

⅓ cup sun-dried tomatoes in oil, chopped

2 tbsp sun-dried tomato oil, divided

4 cups broccoli florets, divided

¼ small yellow onion, diced

1 clove garlic, minced

½ tsp Italian seasoning

¼ tsp paprika

Pinch of crushed red pepper flakes

Sea salt and freshly cracked black pepper, to taste

½ cup + 2 tbsp vegetable or chicken broth

2 tbsp heavy cream

1½ tbsp fresh basil, chopped, divided

2 tbsp grated Parmesan cheese, plus more for garnish


Instructions

1. Heat 1 tablespoon of sun-dried tomato oil in a large skillet over medium-high heat. Add broccoli florets and cook undisturbed for 3 minutes until browned. Stir and cook for another 2-3 minutes. Transfer to a plate.

2. Add the remaining 1 tablespoon of sun-dried tomato oil to the skillet. Add onion and sauté for 3 minutes until softened.

3. Add sun-dried tomatoes, garlic, Italian seasoning, paprika, and red pepper flakes. Stir constantly for 30 seconds.

4. Pour in broth, then stir in heavy cream, 2 tablespoons of Parmesan, and 1 tablespoon of basil. Season with salt and pepper.

5. Return broccoli to skillet. Toss to coat and cook on medium for 2-3 minutes until sauce thickens and broccoli is tender.

6. Transfer to a serving bowl. Top with remaining basil and extra Parmesan. Serve hot.

Notes

You can double the recipe easily for larger gatherings.

Swap cream for half-and-half for a lighter version.

Add lemon zest or juice for a citrusy twist.

For protein, toss in cooked chicken or white beans.
