Marry Me Chicken and Ravioli is a creamy, comforting dinner featuring tender chicken breasts simmered in a sun-dried tomato cream sauce, served over pillowy ravioli. Perfect for a romantic date night or cozy weeknight meal.
Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 cup sun-dried tomatoes, chopped
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1/2 teaspoon crushed red pepper flakes (optional)
1 tablespoon fresh basil, chopped (for garnish)
1 tablespoon fresh parsley, chopped (for garnish)
1 package (15 oz) refrigerated or frozen ravioli
Salt (for pasta water)
Instructions
1. Season both sides of the chicken with salt, pepper, garlic powder, and oregano.
2. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 6–7 minutes per side, until golden and cooked through. Set aside.
3. In the same skillet, add sun-dried tomatoes and minced garlic. Sauté for 1–2 minutes.
4. Pour in heavy cream and chicken broth. Stir in Parmesan and simmer for 5–7 minutes to thicken.
5. Add crushed red pepper flakes if desired. Adjust seasoning with salt and pepper.
6. Return the chicken to the sauce and simmer for 5 more minutes to absorb flavor.
7. Bring a large pot of salted water to a boil. Cook ravioli according to package instructions. Drain and set aside.
8. Plate ravioli, top with chicken, spoon over sauce, and garnish with fresh basil and parsley.
Notes
You can use any ravioli variety, such as cheese, spinach, or mushroom.
To lighten the dish, substitute heavy cream with half-and-half.
Add sautéed spinach or mushrooms to the sauce for extra vegetables.
For a richer sauce, stir in more Parmesan cheese or a touch of cream cheese at the end.
