Description

These delicious cookies are made with browned butter and loaded with oats, chocolate chips, and white chocolate chips. They’re soft, chewy, and full of flavor—perfect for any occasion.


Ingredients

Scale

1 cup (2 sticks / 227 g) unsalted butter

1 ¼ cups (250 g) light brown sugar

½ cup (100 g) granulated sugar

2 large eggs, room temperature

1 teaspoon pure vanilla extract

2 cups (256 g) all-purpose flour

1 cup (90 g) old-fashioned oats

½ teaspoon baking soda

1 teaspoon kosher salt

¼ teaspoon ground cinnamon

1 cup (168 g) white chocolate chips

1 cup (168 g) semi-sweet chocolate chips


Instructions

1. Brown the butter in a saucepan over medium-low heat until golden and nutty, about 6–7 minutes.

2. Add both sugars to the warm butter and stir until smooth. Transfer to a bowl and chill for 10 minutes.

3. Preheat oven to 325°F. Line two baking sheets with parchment paper.

4. Remove mixture from the fridge. Add eggs one at a time and stir in vanilla.

5. Add flour, oats, baking soda, salt, and cinnamon. Stir until just combined.

6. Fold in the white and semi-sweet chocolate chips.

7. Scoop 2-tablespoon portions onto baking sheets, leaving space between. Press each slightly.

8. Bake for 11–13 minutes, until edges are golden. Centers should remain soft.

9. Cool on the tray for 2–3 minutes, then transfer to a wire rack to finish cooling.

Notes

You can reserve a few chocolate chips to press into the tops before baking.

Add chopped nuts or use butterscotch chips for variation.

A sprinkle of flaky sea salt on top can enhance the flavor.
