Crispy halloumi cheese paired with a rich, creamy sun-dried tomato sauce makes this Marry Me Halloumi a cozy, satisfying vegetarian dinner ready in just 30 minutes.


Ingredients

8 oz (225 g) halloumi cheese, sliced into 6 pieces

Olive oil or oil from sundried tomatoes, for frying

½ red onion, finely chopped

3 garlic cloves, minced

¼ tsp red pepper flakes

¼ tsp smoked paprika

2 tsp Italian seasoning

⅓ cup (140 g) sundried tomatoes, chopped

2 tbsp tomato paste

⅔ cup (160 ml) vegetable broth

⅔ cup (160 ml) heavy cream

¾ cup (80 g) parmesan-style cheese, grated

1 small bunch fresh basil, chopped

1 handful baby spinach

Lemon wedges, for serving


Instructions

1. Slice and sear halloumi in a skillet until golden, then set aside.

2. Sauté chopped red onion until soft.

3. Add garlic, spices, and sundried tomatoes. Cook briefly.

4. Mix in tomato paste and broth. Let it simmer.

5. Lower heat and stir in cream and cheese until smooth.

6. Add spinach and basil, letting greens wilt.

7. Return halloumi to pan and simmer for a few minutes.

8. Serve hot with lemon wedges and your favorite side.

Notes

Use tofu and plant-based cream and cheese to make it vegan.

Add chickpeas for extra protein.

Swap basil for parsley or oregano if preferred.

Increase chili flakes for more heat.
