Description

Roasted cabbage wedges nestled in a creamy garlic-Parmesan sauce with sun-dried tomatoes and herbs. This one-pan Tuscan-style dish is perfect as a vegetarian main or comforting side.


Ingredients

1 head (900–1100 g) green cabbage

3 tablespoons olive oil

2 tablespoons butter

½ cup finely diced red onion

4 cloves garlic, minced

1 cup low-sodium chicken or vegetable broth

4 ounces cream cheese, cubed

1 cup heavy cream

½ cup sun-dried tomatoes in oil, julienned

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon red pepper flakes (optional)

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Extra Parmesan for serving


Instructions

1. Preheat oven to 375°F (190°C) and cut cabbage into 8 wedges with core intact.

2. Sear cabbage wedges in olive oil until golden, then remove and season with salt and pepper.

3. In the same pan, add butter and sauté onion for 2–3 minutes. Add garlic and stir for 30 seconds.

4. Deglaze with broth, add cream cheese and whisk until melted and smooth.

5. Add heavy cream, sun-dried tomatoes, herbs, salt, pepper, and red pepper flakes. Simmer for 2–3 minutes.

6. Stir in Parmesan cheese until fully incorporated.

7. Nestle cabbage wedges back into the sauce, spooning over the tops.

8. Cover and bake for 45 minutes.

9. Uncover, baste, and bake for an additional 15–20 minutes until fork-tender.

10. Rest 5 minutes, garnish with parsley and extra Parmesan.

Notes

Use vegetable broth for a vegetarian version.

Tastes even better the next day.

Add pancetta or mushrooms for variation.
